  • 2 medium bananas
  • 1 cup plain flour rice flour or gluten-free flour to make it gluten-free
  • 1 tsp baking powder
  • cup plant-based yogurt I used coconut
  • 2 tsp agave
  • ¼ cup almond milk
  • Vanilla extract to taste
  • Extra agave to drizzle

Instructions

  • Heat your pan on low–medium. Preheat the pan so it’s hot enough without burning the batter.
  • Blend batter. Mix the flour, baking powder, yogurt, agave, almond milk and vanilla until smooth.
  • Slice bananas. Cut into ½ to ⅓ inch rounds for easy dipping.
  • Coat the slices. Dip each banana round into the batter, letting excess drip off.
  • Fry gently. Add a light smear of oil or vegan butter in the pan. Cook bites for 1–2 minutes per side until golden.
  • Keep warm then serve. Transfer cooked bites to a warm oven (about 90 °C) if cooking in batches, then serve it with a drizzle of agave on top.
