Strawberry Pancake Bites

Ingredients

  • 1 piece Chia egg
  • 3/4 cup High protein yogurt* 180 ml
  • 1 tbsp Maple syrup or brown sugar
  • 1/2 tsp Vanilla extract
  • 1/2 cup Gluten-free flour mix or regular flour if not coeliac/intolerant/IBS sufferer (120 ml)
  • 1 1/2 tsp Baking powder + sliced strawberries

Instructions

  • Mix the wet ingredients together
  • Add the dry ingredients and stir until combined
  • Dip the strawberry slices in the batter until completely covered in the batter
  • Cook on a non stick skillet for a couple of minutes on each side
  • Serve with maple syrup

Notes

If you also have IBS, be sure to use lactose-free yogurt. If you are on the elimination phase of the low-FODMAP diet, use less than 65 g of strawberries
