Recently, I hosted a raw vegan workshop with a large group of people in a venue where there wasn’t any cooking facility. The obvious choice was to do raw vegan demonstration. This authentic Mexican salsa Verde recipe was a super star. I served it with toasted tortillas cut into little rounds with a cookie cutter. Since the workshop, there have been several requests for the recipe. Such an easy and versatile dish, you can prepare it in a breeze and it goes well with numerous dishes of all Mediterranean cuisine types.

Authentic Mexican Salsa Verde Recipe

Salsa verde is a perfect blend of roasted nuts, herbs and citrus zest. Take the Fajitas and quesadilla to the next level with a smear of this green goodness or enjoy with crackers.

Ingredients

  • 1/4 cup raw cashews
  • 1/4 cup walnuts
  • 1/2 cup pepitas
  • 1 bunch basil
  • Handful of flat leaf parsley
  • Small handful of mint leaves
  • 1 tsp. lemon zest
  • 1 tbsp lemon juice
  • 1 tbsp capers
  • 1 garlic clove
  • 2 tbsp extra virgin olive oil
  • ½ tsp sea salt
  • Pepper to taste

Instructions

  • Combine all ingredients in a food processor and blend to granular paste consistency.

Authentic Mexican salsa verde recipe is an excellent way to pack goodness of herbs in one hit. Herbs are a rich source of antioxidants which are highly beneficial to help “absorb” free radicals. These little healers are abundantly used in the best dishes around the world.  Ancient cuisines used herbs for their healing powers, flavours and taste behind the colourful array of these treasures.

Mexican salsa verde is traditionally made with parsley but the addition of basil and mint creates a divinely aromatic nutty concoction. Use coriander instead of parsley from time to time for taste variation. Both are refreshingly delightful!

Salsa Verde with roasted vegetables is a match made in heaven.  Perfect as a dip, dollop on fried rice, pasta or filling in sandwiches and wraps.

Tip1: To add a bit of thrill try it with the buzz of the fresh hot green chilli which adds up to a condiment most of us simply look forward to in today’s gastronomical world.

Tip2: Authentic Mexican salsa Verde can be diluted to a dressing like consistency with extra olive oil and lemon juice and is delicious to use in salads.
