Orecchiette is a type of pasta that is shaped like small, concave ears. It is a popular dish in southern Italy, particularly in the Puglia region. Orecchiette can be served with a variety of sauces, such as tomato sauce, pesto, or olive oil and garlic.

Making orecchiette at home is surprisingly easy and quick. All you need is a few simple ingredients and a little bit of time.

Orecchiette can be frozen for up to 3 months. Thaw the orecchiette in the refrigerator overnight before cooking.
Fun fact: Orecchiette means “little ears” in Italian!

Avocado Orecchiette

Ingredients

  • 2 cups All purpose flour
  • 1 piece Large ripe avocado
  • 1/4 cup Baby spinach
  • 1/4 cup Fresh basil leaves
  • 3 big cloves Garlic
  • 2 tbsp Vegan cream cheese @mylifebio
  • 1 cup Green peas
  • salt and freshly ground black pepper to taste
  • 2 tbsp Olive oil

Instructions

  • Mash avocado in a bowl, then add flour, baking powder and salt.
  • Mix well with a wooden spoon or use hands to form a firm dough.
  • Pinch a little dough, the size of a grape. 1. 4. Roll between your palms and press with a finger to form a little curve.

  • In a pot of boiling salted water, cook pasta for 3 minutes and drain well.
  • Add olive oil to a shallow non stick pan, stir in garlic and pasta.
  • Add green peas, a ladle full of pasta water and stir till the peas are tender.
  • Stir in spinach and basil.
  • Season with salt and paper to taste.
  • Serve hot
