Fig season is short-lived in Australia. When they arrive, it’s abundance. I love coating them in chocolate, it just adds to the colour and flavour profile of this wonderful fruit. Pistachio bits just light up the snack to the next level. Perfect as a healthy snack or as a quick refreshing dessert for dinner.

The combination of sweet, honeyed figs, their delicate flesh and vibrant colors providing a comforting base, and rich dark chocolate, its intense cocoa notes and smooth texture adding a layer of indulgence, creates a harmonious blend of tastes that is both familiar and exciting. The figs, often chosen for their peak ripeness and plumpness, offer a burst of sweetness and a hint of earthy depth, while the dark chocolate, with its varying levels of cocoa content, provides a depth of flavor and a touch of luxury.

The crunchy pistachio bits, their nutty flavor adding a touch of complexity and a delightful textural contrast, elevate the overall flavor profile and provide a burst of freshness. The pistachios, often chopped or slivered, are gently incorporated into the chocolate coating, adding a touch of green to the vibrant colors of the dish and a delightful crunch that complements the soft and juicy figs.

The process of coating figs in chocolate and pistachio bits is a simple yet elegant culinary artistry. The figs are carefully washed, dried, and cut in half or sliced, revealing their vibrant red flesh and delicate seeds. The dark chocolate is melted to a smooth and flowing consistency, ensuring even coating and a delightful chocolatey exterior. The melted chocolate is then carefully drizzled or spread over the fig halves, ensuring even coverage.

The pistachio bits are gently sprinkled over the chocolate-coated figs, adding a touch of green and a burst of crunch. The coated figs are then placed on a parchment-lined baking sheet or cooling rack, allowing the chocolate to set and harden.
