Rice Paper Sushi Rolls

A light and refreshing dish with savoury teriyaki tofu, crisp vegetables, and a bold umami-packed dipping sauce.

Ingredients

  • 1 cup sushi rice
  • 1 ½ cup boiling water
  • 2 tbsp mirin seasoning
  • 1 tsp salt
  • 200 g firm tofu
  • 2 cloves garlic crushed
  • 2 tbsp teriyaki sauce
  • 1 tbsp sweet chilli sauce
  • Rice paper sheets
  • Nori seaweed sheets
  • Filling of choice (cucumber, carrot, avocado and tonkatsu sauce)
  • Sesame seeds I used a mix of black and white 50/50
  • Oil for frying

Instructions

  • Prepare the rice. Wash the rice under cold water until the water runs clear. Transfer to a pot, add boiling water, cover with a lid, and cook for about 15 minutes, or until tender.
  • Season the rice. Once cooked, transfer the rice into a bowl and season with mirin and salt. Gently fold to combine and let it cool completely.
  • Marinate and Cook the Tofu. Coat the tofu with garlic, teriyaki sauce, and sweet Chilli sauce. Pan-fry in oil until crispy on both sides.

  • Prepare the Fillings. Slice the carrots and cucumber. Cut the seaweed into smaller pieces and fill a large bowl with cold water.
  • Assemble the rolls. Lightly dip a rice paper sheet in the water, place it on a board, and immediately layer with nori seaweed, rice, tofu, sriracha, cucumber, and carrots. Fold the bottom over the filling, then fold in the sides and seal with the top. Avoid over-soaking the rice paper to prevent it from becoming too sticky.
  • Fry the rolls. Coat each roll in sesame seeds, then fry on both sides until crispy.
