My love for bananas started since I was a very young child. My mom always had a fresh supply of ripe bananas at home. She said it was a complete food. Proof, it has been the staple food of apes and monkeys since a gazillion years ago. I’d watch animated cartoons and enjoy how monkeys compete to get the most bananas from the plant, or steal from each other’s stash. Moreover, somebody jokingly told me when I started getting pimples to eat more bananas. Why? Because monkeys don’t get pimples.

My elders swear by bananas. One lived to be 80, another 90, and my idol, till 102.

Since I started doing some travelling and I see a banana on display or on the menu, I immediately want to check out how it tastes, if the same named fruit tastes the same in different countries. Well, different bananas taste differently. But I love them all, anyway. Not just the raw fruit, its various preparations as well. When I was very young so many years ago, there was Banana Cake, Banana Fritters, and Boiled Bananas with Crushed Ice. Friends even nicknamed me B1B2, from Bananas in Pyjamas, an Australian TV show.

The other star ingredient in today’s recipe is blueberry, my topnotcher in my favorite berry chart. Although it is only second to strawberry in worldwide popularity, do you know that blueberries are among the healthiest berries around?

That is why, I made this Banana Blueberry Bread recipe, I want my favourite fruits and their health benefits to be available to me, my family and friends anytime. You don’t have to eat raw bananas and blueberries to get the healthy nutrients they contain. Moreover, this recipe is so easy to do, that if you don’t try doing it, I’d say I failed to convince you to be part of the (B1B2) Banana Blueberry Fan Club.

All you have to do is mash the bananas, add in all the mixed wet ingredients, then fold in all the mixed dry ingredients. Pour the batter mix into a loaf pan, top with fresh or canned blueberries and bake.

In less than an hour, you can have your health fix for the day.

Banana Blueberry Bread

A perfect breakfast or snack anytime of the year. Moist with burst of blueberries is great toasted with a spread of nut butter or straight of the fridge.

Ingredients

  • 1 cup organic spelt flour
  • 1 |2 cup buckwheat flour
  • 1 |2 cup cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • A pinch of salt
  • 1 tsp vanilla
  • 1 |2 tsp cinnamon
  • 1 tbsp apple cider vinegar
  • 1 |2 coconut sugar
  • 80 ml melted coconut oil
  • 1 cup nut milk
  • 2-3 ripe bananas mashed
  • 100 gr blueberries and some more for decoration

Instructions

  • Mix all dry ingredients together in a bowl and set aside. To the mashed bananas add all wet ingredients, mix well and fold in the dry mixture.
  • Pour into a greased loaf pan and add the bluebs on top. Push them a bit into the batter and bake at 190*C for 40-50 minutes.

If you are like me who can’t have fresh blueberries available all the time, I’d use frozen blueberries. The result is equally good. But bananas, wow, so much variety available. I am thinking on experimenting with different varieties to see which works best. Although being B1B2, they’ll probably be all okay with me. Happy baking!
